The four-course tasting experience begins with an Amuse-Bouche of ‘Yellow-Yellow’ – a crisp, golden dumpling filled with spiced vermicelli topped with King Prawn, showcasing a playful Ivorian staple to introduce the menu.

Watermelon & Wagashi (a Togolese cheese) is the second course to tickle your palate with a delicious hibiscus dressing served with cassava crisps.

A main course of grilled Seabass is served over nutty peanut fonio and fried Okra accompanied by a smoky eggplant relich – rich, bold and deeply rooted in Malian tradition.

Maad fruit sorbet with Madagascan Vanilla Gari Crumble and a candied chilli gel finishes off the meal.

With immersive story-telling and music, the evening promises to be filled with rich histories and insights into Chef Paule’s culinary history and adventures!
