Watermelon & Wagashi (a Togolese cheese) is the second course to tickle your palate with a delicious hibiscus dressing served with cassava crisps.
A main course of grilled Seabass is served over nutty peanut fonio and fried Okra accompanied by a smoky eggplant relich – rich, bold and deeply rooted in Malian tradition.
Maad fruit sorbet with Madagascan Vanilla Gari Crumble and a candied chilli gel finishes off the meal.
